Taquitos

i first made these when my last work was having a cinco de mayo potluck and everyone was being really shitty to the office vegetrian and refused to make anything meatless.
supes easy and good enough for even me, a bean-hater, to eat.
this made 12 taquitos, but I think you could make more if you filled them less
& roll them more tightly so they actually look like a taquito. This is like a...taquito-burrito.
ingredients:
- corn torillas
- can black beans
- we used Bush's Black Bean Fiesta
which is already seasoned - add some southwest seasonings if you have plain ol' beans
- cheese (shredded)
- whatever else you feel like
- we had leftover cooked onion from a hellofresh recipe which inexplicably gave us an entire
onion plus a large shallot for two burgers.
method:
- heat your oven to 350ish
- use a fork or fine potato masher to mush beans, leaving about half whole if you want
- get your toppings ready and a sheet pan ready to assembly line
- heat a couple tortillas in a pan at a time until hot (if they aren't hot enough they'll break)
- smear with beans
- top with cheese and other stuff
- roll 'em up'
- put them on your pan
- it might help to spray them with cooking spray or brush with some oil at this point
to keep the edges from drying/breaking like ours did? Idk they taste fine
- bake for...a bit. 10 minutes?
- sprinkle with bonus cheese if you're into that
- eat with your fav dips. we did salsa verde & sour cream
i'm not very experienced with corn tortillas, there was probably a way to keep them from flaking or breaking maybe but idk what that would be!
