biscuits and chorizo gravy

leah | 04.12.2020

does this count as fusion?

recipe:
biscuits are these from KAF. i overworked them a bit because the starter was really difficult to incorporate with the other ingredients but these were so fucking good. finally a sourdough discard recipe that didn't suck. i recently changed the composition of my starter by adding a spoonful of easy tiger's starter (the rest of which i mailed to a friend) to give it a much needed infusion of active yeast, and now i feed it 50% white flour and 50% rye flour. maybe i already talked about this? time has no meaning.

i used pork chorizo to make sausage gravy in the normal way. brown 1/2 lb chorizo then add a couple tbsp flour. cook for a minute or so to get rid of the raw flour taste. add in a cup of milk, bring to a simmer to thicken, then add more milk if it's too thick. oh and don't forget to season with salt and pepper. this was fresh pork chorizo from the central market butcher case but i actually think chorizo gravy is much better with the shitty cheap chorizo that comes in a plastic tube, the really bright red stuff.
