i was super upset today for no reason so i wanted to eat a vegetable instead of the fried tacos we had planned.
the recipe is from here, we make it essentially as-is. well, walker makes it. i've never bothered to look at the rest of the blog, i don't think it's for me, but this recipe has been in our regular rotation for 6 years. incredible
we like these on corn tortillas, topped with avocado, cilantro, and a lime-yogurt crema.
