baked macaroni and cheese

this is my favorite mac and cheese recipe of all time.

recipe:
the recipe is from smitten kitchen of course. the original uses cottage cheese which i've literally never used because it's gross and you have to use a blender. why not just start with a dairy product that doesnt need to be blended? i use plain full fat yogurt, the normal not-greek kind, as a direct substitute. then you just stir everything together, including uncooked pasta, and put it in a baking dish. the sauce isn't emulsified in any way so it does break but that doesn't matter.
