this is my favorite mac and cheese recipe of all time.

the recipe is from smitten kitchen of course. the original uses cottage
cheese which i've literally never used because it's gross and you have to
use a blender. why not just start with a dairy product that doesnt need to
be blended? i use plain full fat yogurt, the normal not-greek kind, as a
direct substitute. then you just stir everything together, including
uncooked pasta, and put it in a baking dish. the sauce isn't emulsified in
any way so it does break but that doesn't matter.
