what indeed?

the meatballs are from this serious eats recipe, made basically as is. i skipped the pancetta and used heavy cream + splash of vinegar instead of the buttermilk. i also made them into 27 much smaller meatballs because the size in the recipe is ridiculous. i cooled and froze them after the broiling step and will finish them in the sauce the day we eventually use them. ominous.
