a couple korean favorites tonight: zucchini pancakes and tteokbokki.
both recipes are from future neighbor. i love these zucchini pancakes so much, and this style of korean pancake in general. they look like they'd be crispy but they're not since the outside coating is just beaten egg, so adjust your expectations. the tteokbokki was also good even though it was just rice cake and cabbage. i didn't bother making the anchovy stock either (because i'm out of anchovies) and just used a little miso and fish sauce instead.
