i saved the beer i cooked brats in last week because it smelled good and i thought i could easily repurpose it to make beer cheese dip. maybe this is weird but it feels bad to waste stuff now! anyway it basically worked and was pretty good. turns out sausage flavored beer is not a bad idea for beer cheese dip and is maybe actually a really good idea.

and then basically did what i could with what i had. i didn't have a full
12 oz of beer left over because of evaporation during cooking so i scaled
down the recipe a bit. i also didn't have evaporated milk and i didn't
want to use up all of our cheddar so i killed two birds with one stone by
using 4-5 slices of american cheese. the total cheese content was 4oz
american and 4oz cheddar, which was enough for decent melting ability and
good flavor.
we didn't have soft pretzels at home so we ate it with white bread toast
cut into soldiers and tortilla chips.
