today was SO BORING. we finished off the rest of the bbq bread yesterday so i made bread just to have something to do, and i made it into cubes just because it would take a little longer (i only have one cube pan so i have to bake the loaves successively).

from king arthur flour and keep the overall proportions but mess with the
type of flour. i skip the potato flour and dry milk and add that much more
by weight of flour, and i do all milk instead of milk+water. i also add my
rye sourdough discard to this so it doesn't go to waste. the recipe as
written fits my 13" pullman pan and 1/3 fits my 4" pullman pan. i made 2/3
so i could make 2 cubes, so watch out for that in the ingredient amounts.
i like to leave the lid on for the entire bake time. the bread stays a
little pale but it ends up having an almost imperceptible amount of crust
when sliced.
