this is the best breakfast sandwich of all time. vegetables? ketchup? a
literal spoonful of sugar? hell yeah.
you need soft white sandwich bread for this. we used a loaf of white bread
from a bbq place but if you really want extra credit, make a pain de mie
in a pullman loaf pan.
this also wasn't on our initial list of things to make (which still has
like 15 things left on it lmao). walker just happened to grab american
cheese at target on a whim, walker's mom happened to have a loaf of white
bread for us, and we happened to still have part of a cabbage in the
fridge.
i don't use a recipe since it's very simple but
this video is a
good reference and i love future neighbor. the biggest difference is that
i do the egg patty as one big omelette and cut it into size for multiple
sandwiches. the amounts below make about 4 or 5 sandwiches, walker and i
each eat 2 for dinner. we didn't have ham so we used bacon, 1 strip cut in
half per sandwich. meat is not a crucial component and they're just as
good without.
ingredients:

1-2 cups julienned cabbage, i always use too much but more vegetables is
good, right?

1/2-1 cup julienned carrots. i used diced carrots from the freezer,
thawed and minced.

alternatively, just use a couple handfuls of packaged coleslaw mix
- 4 eggs
- 1/2+ tsp salt and pepper. a pinch of msg is also welcome here
- 2 tbsp butter
- 4-5 slices of ham
- 8-10 slices white sandwich bread
- mayonnaise, we only have kewpie at home
- ketchup
- sugar
- sriracha (optional but good)

4-5 slices american cheese (yes, it has to be american, but you can
still make it with no cheese)
method:

beat eggs with salt and pepper in a decent sized bowl. add vegetables
and combine.

heat 1 tbsp butter in a nonstick skillet. pour in egg mixture, rearrange
vegetables so they're in an even layer, and cook until mostly set.

somehow flip the egg. i end up cutting it into pieces and flipping each
piece separately. once the second side is done, take it off the heat and
set aside.

heat the 2nd tbsp of butter in a big cast iron pan and toast the bread.
i can fit 4 slices at a time in mine, so we'll assemble and eat 2
sandwiches and toast the next 4 slices for seconds. you can also just
toast the bread a normal way if you have a toaster or something.

briefly fry the ham slices.

spread mayo, ketchup, and sriracha onto the toasted bread and sprinkle
with sugar. i use between 1/2 and 1 tsp per sandwich. don't skimp here!

cut the omelette into sandwich sized portions, place on bread along with
one slice of ham and cheese, then top with another bread, y'know, like a
sandwich. we usually tetris smaller pieces of egg together since the
omelette is round and the bread is square.

eat sandwich.
