cake rusk/biscotti

do non-desis know what cake rusk is? it's basically cake that's been baked again at a lower temperature to dry it out, like biscotti. my family buys it in big boxes at desi grocery stores for eating with tea or coffee.

i had a big ziploc full of cake scraps from wednesday and food waste is bad! cake balls are also bad! cake rusk is good!

recipe:
preheat oven to 250F. cut bigger cake scraps into 1.5" x 4" planks. arrange planks + irregular scraps onto a metal cooling rack in a sheet pan. bake for like 1-2 hours? they should be dry to the touch and not bendy, though a bit of squish is okay since they'll dry out even more as they cool. cool completely before storing in an airtight container.
