fried tofu chicken sandwiches

i spent 5 hours today updating this blog. i've been writing posts on my phone but not publishing them until later because i hate computer. even with the content already written, it takes forever to edit, format, and find pictures. you can tell which days i was totally over it by how bad the pictures are. so no, i will not be continuing this project once quarantine ends. it's not like anyone reads it anyway! i thought shouting into the void would be cathartic but that only works for 240 character bursts.

we watched a video about either fried tofu or chicken sandwiches yesterday so walker wanted to have fried tofu chicken sandwiches today.

i started making the buns in the morning but they way overproofed because i was working on this dumb blog. i reshaped them and let the proof again and they were fine.

i cut frozen and thawed tofu into slabs (i got 4 good sized ones from a block). i pressed out as much moisture as i could then followed the process from this recipe. in retrospect, i could have pressed the slabs longer and used some rice flour in the dredge, which is what i did last time. oh well.
