we had leftover wonton wrappers from the lasagna so i thought we should make potstickers. anyway, did you know square wonton wrappers are different from round dumpling wrappers? apparently wonton wrappers have egg in them. i thought this would be a vegan meal for once but it's not.
i'm gonna be insufferable for a second: i vastly prefer my homemade dumpling wrappers to storebought but in the interest of reducing waste and work, we used storebought this time. i just want everyone to know that 90% of the time i make my own dumpling wrappers and i'm like pretty good at it!

it's this recipe from andrea nguyen for the filling, except
with about 2 cups chopped cabbage instead of spinach. i didn't do the
boiling water thing to wilt the cabbage, instead i just sauteed the
cabbage, carrots, mushrooms, and tofu together for a few minutes to let
some of the water cook out before adding the rest of the ingredients.
we folded these a bunch of different ways. i'm only good at the gyoza shape which does not work well with square wrappers.
i cooked them like potstickers: fry the bottoms in a little bit of oil, add some water to the pan and cover to let steam for a few minutes, remove lid to cook off the water, and re-crisp in remaining oil.
